What is Haupia?

Haupia is a traditional Hawaiian dessert made from coconut milk, sugar, and a thickening agent, usually cornstarch. It is often enjoyed as a pudding or as a filling for pies and cakes. The result is a creamy, smooth treat that captures the taste of the tropics. Over the years, haupia has become a staple at Hawaiian luaus, celebrations, and family gatherings.

Why is it a Popular Hawaiian Dessert?

The popularity of haupia in Hawaii can be attributed to its simple yet delightful flavor and its versatility. Coconut milk is abundant in Hawaii and tropical regions around the world, making haupia a natural choice for a dessert. Its refreshing taste provides a perfect contrast to rich and savory dishes typically served at Hawaiian feasts. Additionally, haupia's easy preparation and the availability of its ingredients have solidified its place in Hawaiian culinary traditions.

Where was Haupia Pie Invented?

Haupia pie is a modern twist on the traditional haupia pudding. While haupia itself has long been enjoyed in Hawaii, haupia pie emerged more recently as a popular variation. The invention of haupia pie can be traced back to Hawaiian bakeries and restaurants that sought to incorporate the beloved coconut pudding into a more substantial dessert. By pairing haupia with a homemade pie crust and topping it with whipped cream, bakers created a dessert that quickly gained popularity among locals and visitors alike.

Baking Instructions

Pie Crust Instructions

  1. Prepare the Crust: In a large bowl, combine the flour and salt. Add the chilled butter cubes and use a pastry cutter or your fingers to work the butter into the flour until the mixture is crumbly.
  2. Incorporate Ice Water: Slowly incorporate ice water, adding one tablespoon at a time until the dough forms.
  3. Refrigerate the Dough: Shape the dough into a disk, cover it with plastic wrap, and let it chill in the refrigerator for a minimum of 30 minutes.
  4. Roll Out the Dough: On a surface dusted with flour, spread the dough to match the size of a 9-inch pie plate. Move the dough to the plate, cut off any surplus, and crimp the edges.
  5. Blind Bake: Heat the oven to 375°F. Place parchment paper in the crust and add pie weights or dried beans. Bake for 15 minutes, then take out the weights and parchment and bake for another 10 minutes or until the crust turns golden brown.

Haupia Instructions

  1. Mix Ingredients: In a medium saucepan, whisk together the coconut milk, whole milk, sugar, and salt.
  2. Cook the Mixture: Place the saucepan over medium heat and cook, stirring constantly, until the sugar dissolves.
  3. Add Cornstarch: add a few teaspoons of water to the cornstarch to make a slurry and add it to the other ingredients. Whisk until the mixture thickens and starts to bubble.
  4. Add Vanilla: Remove from heat and stir in the vanilla extract.
  5. Cool: Pour the haupia pudding into the cooled pie crust, spreading it evenly. Refrigerate for at least 4 hours or until set.

 Whipped Cream Instructions

  1. Whip the Cream: In a large mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract.
  2. Beat: Use an electric mixer to beat the cream until stiff peaks form.

Assembly and Serving Instructions

  1. Top the Pie: Once the haupia layer is set, spread or pipe the whipped cream evenly over the top of the pie. Garnish with chocolate shavings, sprinkles, or toasted coconut flakes.
  2. Serve: Slice and serve your haupia pie, enjoying each bite with a cup of our Coconut Creme Pie Kauai Coffee for a perfect pairing.
