Irish Soda Bread with Kauai Coffee, Cherries and Chilies
This easy and delicious recipe for Irish Soda Bread with Kauai Coffee, tart cherry, and chilies will transport you from the Hawaiian Islands to the Emerald Isle just in time for St. Patrick's Day! Soda bread is a simple, no-knead bread you can make in a matter of minutes with just a few ingredients.

Ingredients
- 500g All-purpose flour (about 4 cups)
- 1/4 cup sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cayenne pepper
- 1 stick cold Irish butter, cubed
- 1 cup buttermilk or buttermilk substitute
- 1 cup dried tart cherries
- 1 egg
- 1 cup Kauai Coffee (Typica or any Kauai Coffee with bright citrus or berry notes)
Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- Brew one strong cup of Kauai Coffee and soak dried tart cherries in the coffee for 10-15 minutes or until plump and rehydrated.
- In a large mixing bowl, combine dry ingredients (flour, sugar, salt, baking soda, and cayenne powder). Whisk the ingredients gently until fluffy and well combined.
- Add the cold, cubed Irish butter to the dry ingredients and work it in with a fork, pastry cutter, or your hands until the texture resembles coarse sand. You shouldn't have any butter pieces larger than a pea when you are finished.
- Strain the tart cherries from the coffee and reserve 1/4 cup of the remaining liquid.
- Add the rehydrated cherries to the flour and butter mixture and stir to combine.
- In a small bowl, whisk the egg with the buttermilk or buttermilk substitute and 1/4 cup of reserved coffee.
- Add liquid ingredients to the dry ingredients and mix until a soft dough forms. Your dough should not be sticky or wet; dust with a little more flour if needed.
- Once the dough is well combined and not tacky, form it into a large, round loaf and turn out onto a parchment paper-lined baking tray.
- Cut an 'X' into the top of the loaf and bake it for 35-40 minutes or until a toothpick inserted into the center of the loaf comes out clean.

Recipe notes
If you cannot find uncultured buttermilk in your local grocery store, you can easily substitute it with 1 cup of milk mixed with one tablespoon of lemon juice. Stir the lemon juice into the milk and set it aside for 10 minutes. Once the milk has thickened, and you can see small curds start to form, your buttermilk substitute is ready to use. Cayenne powder can vary in heat. We recommend just a teaspoon for a subtle hint of heat but adjust to your liking and the intensity of your spice.Coffee Pairing
