Recipe: Mocha Ice Cream Sandwiches with No-Churn Kauai Coffee Ice Cream
Soft Mocha Chocolate Chip Cookies
Ingredients
- 1 stick of butter, room temperature
- 1 cup brown sugar, packed
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 large egg, room temperature
- 1/2 cup unsweetened cocoa powder
- 2 1/2 cups all-purpose flour
- 1/2 cup milk
- 1/2 cup cold brew concentrate made from Kauai Coffee. We recommend our 100% Hawaiian Medium Roast or any of our Estate Reserve Dark Roasts. The fruit-forward berry notes in our Typica Dark are especially good!
- 1 cup mini chocolate chips
Instructions
- In a large mixing bowl, beat the butter, brown sugar, baking soda, baking powder, and salt until pale and fluffy.
- Add the egg and continue beating until smooth.
- Mix in the cocoa powder.
- Combine the milk and cold brew, then add alternately with the flour until just combined.
- Fold in the mini chocolate chips.
- Use a cookie dough scoop or large spoon to drop dough onto a lined baking sheet.
- Bake at 350°F for 10 to 12 minutes, or until set.
- Let the cookies cool completely, then freeze for easy sandwich assembly.

No-Churn Kauai Coffee Ice Cream
Ingredients
- 2 cups heavy whipping cream
- 1 (14 oz.) can sweetened condensed milk
- 3 tablespoons cold brew concentrate made with Kauai Coffee
- Pinch of salt
- Optional: caramel, chocolate chunks, or chopped macadamia nuts
Instructions
- In a stand mixer or with a hand mixer, whip the cream until stiff peaks form.
- Gently fold in the sweetened condensed milk, cold brew, and salt.
- Add any optional mix-ins you love.
- Pour into a loaf pan or freezer-safe container and freeze for at least 4 hours.
