Espresso Brownies with Coffee Cream Frosting

Rich, fudgy brownies paired with a luscious vanilla coffee cream frosting—perfect for coffee lovers!

Ingredients

Brownies:

  • 1 cup butter, melted
  • 1 cup semi-sweet chocolate chips or chunks
  • 1 1/2 cups granulated sugar
  • 1/4 cup 100% Kauai Coffee brewed as a strong espresso and cooled. We recommend Poipu Estate Espresso Roast, Holiday Blend, or any Dark Roast.
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/4 tsp salt

Coffee Cream Frosting:

  • 2 cups powdered sugar
  • 1/4 cup brewed Kauai Coffee (any roast or flavor)
  • 1/2 cup butter, softened
  • 1 tsp vanilla bean paste or contents of one vanilla bean
  • Festive sprinkles (optional)

Instructions

  1. Preheat the oven to 350°F and line an 8x8 baking pan with butter and parchment paper.
  2. In a microwave-safe mixing bowl, carefully melt the butter and chocolate together 30 seconds at a time until it is smooth and creamy. Let the butter and chocolate cool slightly before adding the granulated sugar, brewed coffee, eggs, and vanilla extract, mixing until well combined.
  3. In a separate bowl, sift together the flour, cocoa powder, and salt. Gradually fold the dry ingredients into the wet ingredients to create a smooth brownie batter.
  4. Pour the batter into the prepared pan and bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  5. Allow brownies to cool completely before frosting.
  6. For the frosting, beat together powdered sugar, brewed Kauai Coffee, butter, and vanilla paste until smooth.
  7. Spread over cooled brownies, top with optional sprinkles, and enjoy!

Ingredients

Blondies:

  • 1 cup butter, melted
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Festive sprinkles or crushed peppermints (optional)

Chocolate Mistletoe Ganache:

  • 1/2 cup brewed Kauai Coffee Chocolate Mistletoe
  • 2 10 oz. bags of semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • 1/2 tsp peppermint extract

Instructions

  1. Preheat the oven to 350°F and grease an 8x8 baking pan with butter.
  2. In a bowl, combine melted butter, sugars, eggs, and vanilla extract. Stir in all-purpose flour and salt until just combined.You should have a thick, cookie dough like consistency.
  3. Spread the blondie batter evenly into the prepared pan and bake for 25 to 30 minutes. Cool completely.
  4. For the fudge topping, heat brewed Chocolate Mistletoe Coffee and heavy cream in a saucepan over low heat. Add chocolate chips and stir until melted and smooth. Remove from heat and mix in vanilla extract.
  5. Pour the fudge over the cooled blondies, top with optional sprinkles or peppermints and let set in the refrigerator for at least 1 hour before slicing.
