Estate Roasted Coffees

Our roasting process begins on the same estate where our coffee is grown. On roasting days, you can smell the captivating aroma of a freshly roasted batch at the Visitor Center and throughout the farm. At the Visitor Center, you can also watch the transformation from green bean to roasted coffee perfection, guided by Wailani, who leads live roasting demonstrations throughout the week.

Roasting on-site allows us to showcase the nuances of every varietal and single-estate blend of 100% Hawaiian Coffee we offer. Our expert roast masters carefully craft each profile to bring out the best in every bean, from delicate floral notes to smooth, chocolatey finishes.

What Happens During the Coffee Roasting Process?

Roasting is where chemistry meets craftsmanship. As the beans heat up in the roaster, moisture evaporates, and the sugars inside the bean begin to caramelize. This is when the aromatic compounds you smell in every cup of coffee develop, and complex chemical reactions take place that build the flavor we taste in the final brew.

Light roasts are typically finished just after the first crack. This is when beans begin to pop and expand in the roaster. Medium roasts go for a bit longer, balancing brightness and body. Dark roasts are roasted the longest, often past the second crack, developing a dark color and rich oily surface.

Light Roast and City Roast

Light roast coffees tend to preserve more of the inherent flavor of the coffee cherry. You might taste bright citrus, stone fruit, or even floral notes. They usually have a lighter body and higher perceived acidity or bright taste. Because light roasts are less altered by heat, they offer a direct reflection of the soil, water, and agricultural characteristics of the origin (growing region).

What Is Dark Roast Coffee?

Dark roast coffees are roasted longer and at higher temperatures, creating a deep brown bean with a shiny surface. This longer roast time brings out bold flavors like toasted nuts, baker’s chocolate, and sometimes earthy or even woody notes. The acidity or bright flavors are mild, and the body is full and smooth.

If you love a robust cup, our Typica Dark Roast offers a rich and comforting profile with earthy undertones and low acidity. It’s a classic choice for those who prefer depth and strength in every pour. Typica is also one of the most common varietals grown throughout Hawaii, including the Kona region. Lighter roasts like Kope Olenalena are best enjoyed without additions. The bright acidity and nuanced fruit or floral notes can get lost when mixed with cream or sugar. These coffees are ideal served black or with a splash of plant-based milk to maintain clarity. If you do want to sweeten a light roast, keep it simple and minimal. Try a teaspoon of raw sugar or a dash of coconut milk for a subtle complement
